Ingredients
1 bag Best Choice Semi-Sweet Chocolate Chips
2 tsp Clearly by Best Choice Coconut Oil
1 bag Best Choice Waffle Pretzels
1 bag Best Choice Marshmallows
1/4 cup Best Choice Creamy Peanut Butter
1/2 to 3/4 cup Best Choice Graham Cracker Crumbs
Method
Fall nights call for s’mores—no campfire required! These bite-sized treats layer sweet Best Choice Marshmallows, rich Best Choice Chocolate Chips, and crunchy Best Choice Waffle Pretzels for a cozy twist on a classic. Our S’mores Bites are perfect for sharing at fall gatherings or enjoying with a warm mug of cocoa.
- Preheat your oven to 350°F.
- Line two baking sheets with parchment paper and set aside.
- Arrange 48 pretzels in a single layer on the baking sheets.
- *Leave about 1 1/2 inches between each pretzel so the marshmallows can expand.
- Cut each marshmallow in half around the middle and place one half on each pretzel.
- Place the baking sheets in the oven and bake until the marshmallows have melted a little and are just barely beginning to brown, about 5 minutes.
- Remove the sheets from the oven and let the marshmallows cool for about 3 minutes.
- Place a 1/4 tsp of peanut butter in the center of each marshmallow.
- Then, gently press a second pretzel on top of the peanut butter to create a pretzel-marshmallow sandwich and set aside for later.
- Place the chocolate chips and coconut oil in a heatproof bowl.
- Then, place the bowl over a pan of simmering water, making sure that the water does not touch the bottom of the bowl.
- Melt the chocolate and coconut oil together, stirring occasionally.
- Once the chocolate has almost melted, remove the pan from the heat and continue stirring to melt the chocolate completely.
- Remove the chocolate from the pan of simmering water.
- Working quickly, dip half of each s’mores bite into the melted chocolate.
- Place the s’mores bite back on the baking sheet.
- While the chocolate is still wet, sprinkle with the graham cracker crumbs.
- Repeat for remaining bites.
- Place the baking sheet in the refrigerator or freezer for a few minutes to allow the chocolate to set.
