Ingredients
2 cups Best Choice Elbow Macaroni
1 cup Best Choice Italian Bread Crumbs, divided
2 tbsp Best Choice Unsalted Butter
2 tbsp Best Choice All-Purpose Flour
1/2 tsp Best Choice Onion Powder
1/2 tsp Best Choice Garlic Powder
1/2 tsp Best Choice Seasoned Salt
1-3/4 cups Best Choice Whole Milk
2 cups Best Choice Shredded Sharp Cheddar Cheese, divided
1 cup Best Choice Shredded Pepper Jack Cheese
3/4 cup Best Choice All-Purpose Baking Mix
2 Best Choice Large Eggs, room temperature, lightly beaten
Method
Preheat the oven to 425°F.
Cook macaroni according to package directions and drain.
Meanwhile, grease a mini-muffin pan and sprinkle 1/4 cup of the bread crumbs into each cup.
In a large saucepan, melt the butter over medium heat.
Stir in the flour and seasonings until the mixture is smooth.
Then gradually whisk in the milk.
Bring the milk mixture to a boil, stirring constantly, and cook until thickened, 1-2 minutes.
Stir in 1 cup of the cheddar cheese and the pepper jack cheese until the cheese has melted.
Remove the pan from the from heat and stir in the biscuit mix, eggs, and 1/2 cup the bread crumbs.
Add the cooked macaroni and toss to coat.
Spoon about 2 tbsp of the macaroni mixture into each prepared mini-muffin cups.
Sprinkle the remaining cheddar cheese and seasoned bread crumbs on top of each macaroni mixture cup.
Bake the macaroni bites until they are golden brown on top, 8-10 minutes.
Allow the macaroni bites to cool in the pan for 5 minutes before serving.
